Makes enough for 10 servings
To make the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Premix (yields 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Method
Making the Syrup: Put the listed items inside a pot, heat until it reaches a simmer, stirring until the sugar dissolves. After that, remove from the stove allowing it to cool down entirely. Pour to a clean bottle, seal and store chilled, it can be stored for up to one month.
For the Cocktail Base: Pour the specified liquids into one large bottle, leave to sit for 60 minutes, then filter it , ideally through a fine cloth, so it's fully clarified.
When ready to serve: Measure 85ml from the batch mix to a mixing glass filled with ice, and stir carefully for about 60 seconds until cold. Filter into a frosted cocktail glass or equivalent, decorate with some cranberries and complete it with a light spray of the essential oil over the top.
